- Cake:
- 2 tablespoons unsalted butter at room temperature
- 2/3 cup sugar
- 1/2 cup sour cream
- 1 egg
- 1 teaspoon vanilla extract
- 3 very ripe bananas
- 1 cup flour
- 1/4 teaspoon salt
- 1/2 teaspoon baking soda
- Cream Frosting:
- 2 tablespoons unsalted butter at room temperature
- 1 1/4 cup confectioner sugar
- 1/4 cup heavy cream
- 1 tablespoon vanilla extract
- Additional:
- Chocolate chips
- 9 inch round cake pan
- butter for greasing pan
Instructions
- Preheat oven to 375F
- Grease a 9 inch round cake pan with butter
- In medium bowl add flour, baking soda and salt and set aside
- In separate bowl cream together butter, sugar and sour cream
- Add to the cream mixture egg, vanilla and mix
- Add mashed bananas to the mixture
- Finally add the dry ingredients to the wet and mix well
- Bake at 375F for 28 minutes or until toothpick comes out clean in center
- Frosting: (special note: I make after removing cake from oven since you have to wait till the cake is completely cooled to apply frosting)
- Cream together with hand mixer butter and confectioner sugar
- Slowly add in heavy cream and vanilla extract while mixing
- Spread frosting over completely cooled cake
- Last but not least:
- Chop desired chocolate chips and sprinkle over entire cake or individual slices
