Banana Cake

The Best Banana Cake


  • Cake:
  • 2 tablespoons unsalted butter at room temperature
  • 2/3 cup sugar
  • 1/2 cup sour cream
  • 1 egg
  • 1 teaspoon vanilla extract
  • 3 very ripe bananas
  • 1 cup flour
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking soda
  • Cream Frosting:
  • 2 tablespoons unsalted butter at room temperature
  • 1 1/4 cup confectioner sugar
  • 1/4 cup heavy cream
  • 1 tablespoon vanilla extract
  • Additional:
  • Chocolate chips
  • 9 inch round cake pan
  • butter for greasing pan


  1. Preheat oven to 375F
  2. Grease a 9 inch round cake pan with butter
  3. In medium bowl add flour, baking soda and salt and set aside
  4. In separate bowl cream together butter, sugar and sour cream
  5. Add to the cream mixture egg, vanilla and mix
  6. Add mashed bananas to the mixture
  7. Finally add the dry ingredients to the wet and mix well
  8. Bake at 375F for 28 minutes or until toothpick comes out clean in center
  9. Frosting: (special note: I make after removing cake from oven since you have to wait till the cake is completely cooled to apply frosting)
  10. Cream together with hand mixer butter and confectioner sugar
  11. Slowly add in heavy cream and vanilla extract while mixing
  12. Spread frosting over completely cooled cake
  13. Last but not least:
  14. Chop desired chocolate chips and sprinkle over entire cake or individual slices
