Not to mention, I love how quick it was to make these waffles, with very little prepping and not much clean up. No oven required, I think this will be a perfect recipe to make all summer long. The simple lemon cream sauce has two versions, either with sour cream and lemon juice or greek yogurt and lemon juice; whichever your heart and health desires. Just don’t forget to top with crunchy green onion to finalize this perfect dish.

The Best Waffeled Zuchini with a Two Ingriendient Lemon Cream Sauce
- Yield: 3 1x
Ingredients
- 2 packed full cups of shredded zuchini
- 1/4 a large onion, finely chopped
- 2/3 cups shredded cheddar cheese
- 2/3 cups bread crumbs
- 3 eggs
- 3/4 teaspoon garlic powder
- 1 teaspoon salt
- 1/4 teaspoon pepper
- Zest of 1/2 a lemon
- Chopped green onions
- Canola oil baking spray
- Optional: 1/8 teaspoon of ground cinnamon
- Lemon Cream Sauce:
- Either plain greek yogurt or sour cream
- Lemon juice
Instructions
- Heat your waffle maker to med high heat
- In large bowl add your shredded zucchini, onion, cheddar cheese, bread crumbs, eggs, garlic powder, salt, pepper and lemon zest and mix until all ingredients incorporated
- OPTIONAL: I added a small amount of ground cinnamon that pairs beautifully with the zucchini, this helped make the dish slightly sweeter and my kids loved it.
- Spray your waffle maker with baking spray and add 1/3 of the batter to the waffle maker
- Cook on medium high heat until golden brown
- Remove carefully by lifting with tongs or a fork and using a flat spatula to transfer to plate
- Repeat two more times making 3 round 9 inch diameter waffles
- *Lemon Cream Sauce*
- Mix together 1/4 cup of sour cream or greek yogurt and 1 tablespoon of lemon juice(or to taste)
- Serve zucchini waffles with cream sauce and garnish with chopped green onions
