The Best Waffeled Zuchini with a Two Ingriendient Lemon Cream Sauce


  • 2 packed full cups of shredded zuchini
  • 1/4 a large onion, finely chopped
  • 2/3 cups shredded cheddar cheese
  • 2/3 cups bread crumbs
  • 3 eggs
  • 3/4 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • Zest of 1/2 a lemon
  • Chopped green onions
  • Canola oil baking spray
  • Optional: 1/8 teaspoon of ground cinnamon
  • Lemon Cream Sauce:
  • Either plain greek yogurt or sour cream
  • Lemon juice


  1. Heat your waffle maker to med high heat
  2. In large bowl add your shredded zucchini, onion, cheddar cheese, bread crumbs, eggs, garlic powder, salt, pepper and lemon zest and mix until all ingredients incorporated
  3. OPTIONAL: I added a small amount of ground cinnamon that pairs beautifully with the zucchini, this helped make the dish slightly sweeter and my kids loved it.
  4. Spray your waffle maker with baking spray and add 1/3 of the batter to the waffle maker
  5. Cook on medium high heat until golden brown
  6. Remove carefully by lifting with tongs or a fork and using a flat spatula to transfer to plate
  7. Repeat two more times making 3 round 9 inch diameter waffles
  8. *Lemon Cream Sauce*
  9. Mix together 1/4 cup of sour cream or greek yogurt and 1 tablespoon of lemon juice(or to taste)
  10. Serve zucchini waffles with cream sauce and garnish with chopped green onions
