How to make Keto Friendly Breakfast Tacos

Recently this year I’ve dived into the world of keto. Finding new recipes that excited my pallet became the challenge on this diet (or lifestyle change for some). These easy Breakfast Tacos became my Go-to recipe for busy mornings. They are ready in about ten minutes and very satisfying. 

To make these wonderful Keto friendly tacos, head over to your nearest Trader Joe’s and pick up their yummy cauliflower thins. Don’t live near a Trader Joe’s, don’t fret. There are many brands of cauliflower thins out there, these featured below are just our favorites.

Trader Joe’s is one of my personal obsessions. These Cauliflower Thins are the newest craze sweeping the Trader Joe’s world. The thins have a delectable flavor and are so versatile. In addition, these cauliflower Thins can be used to make Keto friendly, low card and gluten free Quesadilla’s. They also make a great replacement for a sandwich or burger bun.

Will the Cauliflower Taco Shells Hold up

Here is the evidence below. After taking photos for about 15 minutes I grabbed this bad boy to show the results. Sure enough the cauliflower tacos shells held up beautifully.

Breakfast Tacos Recipe

Ingredients

Scale

2 Cauliflower Thins

1 tablespoon butter

2 eggs, whisked

Salt and Pepper

1.5 tablespoons sour cream

12 tablespoons shredded cheese blend of choice

Favorite hot sauce

Rough chopped cilantro


Instructions

Heat a non stick pan over medium heat

Add 2 cauliflower thins to the pan heating on both sides until warm, about 1 minute per side

Remove the thins and place aside on plate

Turn heat to low and add butter

Immediately add your eggs and cook on low to medium heat until scrambled, making sure to stir constantly with a spatula (allowing for evenly cooked eggs)

Once cooked, add salt, pepper, and cheese

Add sour cream to the insides of the heated cauliflower taco shell (this will act as the glue for the other ingredients)

Add egg mixture to the tacos and top with desired amount of cilantro and hot sauce

Serve immediately!
