Ingredients
2 Cauliflower Thins
1 tablespoon butter
2 eggs, whisked
Salt and Pepper
1.5 tablespoons sour cream
1–2 tablespoons shredded cheese blend of choice
Favorite hot sauce
Rough chopped cilantro
Instructions
Heat a non stick pan over medium heat
Add 2 cauliflower thins to the pan heating on both sides until warm, about 1 minute per side
Remove the thins and place aside on plate
Turn heat to low and add butter
Immediately add your eggs and cook on low to medium heat until scrambled, making sure to stir constantly with a spatula (allowing for evenly cooked eggs)
Once cooked, add salt, pepper, and cheese
Add sour cream to the insides of the heated cauliflower taco shell (this will act as the glue for the other ingredients)
Add egg mixture to the tacos and top with desired amount of cilantro and hot sauce
Serve immediately!
