Transform everyday sunflower seed butter into creamy perfection by double roasting the seeds. Confession, this magical concoction happened by accident when I purchased pre roasted seeds verses the unroasted seeds to make a quick batch of sunbutter (sun flower seed butter). This resulting in a more nuttier flavored butter and exceptional roasted flavor….
It never fails, every time I find a snack or party mix it typically contains nut ingredients. As much as I love nuts, due to mine and my families allergies we can no longer enjoy them. This snack mix was inspired by a girlfriend who invented her own mix for a Sprinkle (Baby shower) she threw for me. I do not recall the specific ingredients chosen, but ever since that party I’ve been wanting to create a tasty combo myself. What I didn’t see coming was how obsessed I would become with this simple and quick snack mix. I mean typically snack mixes with out nuts just feel like they are missing something, but not this one!
Every item in this delectable snack mix was purchased at my local Trader Joe’s; whole grain crunchy and salty multi grain pretzel nuggets, dried organic sweet cranberries and chocolate covered blueberries. Will you dive right in for those yogurt covered pretzels first? Or maybe the colorful chocolate covered candies that are poured into an adorable martini glass. The banana chips are one of my favorites in there, but then again I love it all, it’s just a perfect combination.
We are starting by making Ranch Cheddar Chicken Meatballs, but it does not stop there. Then we will turn these delicious meatballs into a complete dish that puts an amazing twist on your classic spaghetti and meatballs. Transform your ordinary spaghetti sauce by substituting with a light and creamy parmesan sauce for the ultimate pairing.
Just imagine grabbing one of these bad boys pictured below right off the pan, they are so delicious all on their own. Then making your spaghetti with parmesan cream sauce and placing these little addictive meatballs right on top. Of course you may add extra fresh parmesan or chopped fresh parsley to garnish. One thing is for sure, I’M IN LOVE! This recipe for Bacon Cheddar Ranch Meatballs and Spaghetti are my newest obsession and I’m pretty sure you will become infatuated with this dish once you try it.
My children woke up this morning asking to eat this for breakfast. Like most children, getting my little’s to eat meat is quite the challenge, unless it’s bacon because they are like their Mama. So, when they kept grabbing more of these meatballs off the tray before I could get them to the table I was delighted. Not only did the entire family love this meal, it instantly became my new favorite dinner. The meatballs alone are packed with so much flavor and then you top this entire creamy meal with BACON!
The only issue I’m having right now is resisting the compulsion to make this cheesy, bacon filled, pasta and meatball deliciousness again tomorrow. I’ll have to end this post here because I am about to go reheat the small amount of left overs for my lunch today (EXCITED FACE). Maybe I’ll share with the kids or possibly hide in the kitchen corner on the floor praying no one comes over while I’m inhaling this AMAZING dish.
O.k. Mama’s this is a impromptu gluten free chicken nuggets post after yesterdays response from everyone when I posted this picture on Facebook last night. I took this picture with my phone and it is not my normal way to post, but I feel like getting you all the recipe a.s.a.p. was top priority 🙂 This was not only an unplanned post, but also dinner. After getting everyone ready to swim in the pool yesterday I quickly realized there was storm clouds to the north of us. I decided to make dinner early and wait for the weather to pass.
Katia is currently eating gluten free to help determine a possible allergy and that prompted me to make these Gluten Free Chicken Nuggets. Along side I made my favorite Dill Roasted Carrots and The Best Roasted Broccoli, two healthy and delicious recipes.
Can you say drool worthy! Immediately after snapping this photo of the Warm Asiago Ricotta with Bacon and mushrooms, my family and myself dug in. Magically, before my eyes the entire dip disappeared, seriously, we inhaled this enjoying every single bite. I’m always impressed when I can get my three year old to try new foods; I’m not as hopeful for his baby sister though, she hates food! I don’t get it, no matter what food this little girl tries she ends up shaking her head and refusing to take even one more bite. Katia currently mimics every move her big brother makes, good or bad, I’m hoping his love for food is also copied one day. Now, as big brother sits their eating this delicious dip telling me “yuuuum this is amazing” I then looked right at my baby girl with her mouth clamped shut. Really!? Girl! You have no clue what your missing out on. Do you have a picky eater? Any tips or advice are gladly accepted!…
We have all been there… Having guests over, but don’t want to fret in the kitchen all day or night. How’s ten minutes of prep work and done sound! Now you and your guest can enjoy warm taco dip all evening long. I’m wishing that I would have thought of this recipe years ago because it would have been perfect for game nights, they were a more frequent event pre Katia and Maxwell. I miss just pulling out the Scrabble, Pictionary or Taboo with wine, beer and food in abundance. Having tiny little people sure puts a pause on random fun game nights during the week! In due time that tradition will have to begin again, possibly in the future a game night with the kiddos. I can just imagine Friday evenings with family, warm dip and games, sounds like the best Friday night I could ask for.
