Apple Cinnamon Muffins

In loving memory of Patryk Alexander his favorite recipe Apple Cinnamon Muffins

Early one morning, my son Patryk Alexander abruptly came running up to me (jumping excitedly) handing me a piece of paper. Staring at this piece of paper I felt perplexed and surprised all at once. My son knew how to use the printer at barley three years old, this was my intelligent son Patryk who figured everything out all on his own. Not only did he navigate the computer better than most his age, he began using the printer without hesitation (self taught). Patryk came rushing over to me, jumping happily and blurted loudly that we were going to make these Apple Cinnamon Muffins. I truly did not know how deeply I would hold on to this memory of making muffins with my son.

This apple cinnamon muffins recipe is adapted from Nick Jr.’s web site where my son loved to play. He did not really care for food much so this was the perfect set up to get him to try something new to eat. Well, Patryk not only liked, but he loved making them more than anything. It was a special memory for me, I hold on to these dear memories as tightly as possible.  In those moments where I was cooking with my son we didn’t think about what doctors visits we would have that week or what level of pain he was feeling that day. I was just a mom, he was just my son and we were simply making muffins. These muffins are simple just like this memory….simple and perfect!

My son Maxwell on the other hand….I can not keep food out of his mouth. The joy and excitement on his face before mealtime is quite funny. It seems as though each meal time is his birthday or a special celebration. Sometimes while desperate to snap him out of a tantrum I’ll say “I think its snack time” and sure enough he jumps up from whatever screaming fit and runs to his highchair giggling in excitement 🙂 I know I will not always be able to use this tactic, but for now it works. Years later making these Apple Cinnamon Muffins with my son Maxwell fills me with joy. I will continue to use this recipe as a gate way to tell beautiful stories of Maxwell’s brother Patryk. Now holding on tightly to these new memories of just my son and myself cooking, sharing memories of someone we love!

Apple Cinnamon Muffins

Ingredients
  • 2 cups all purpose flour
  • ¾ cup sugar
  • 2 teaspoons baking powder
  • 2 teaspoons ground cinnamon
  • ¼ teaspoon salt
  • 1 large egg
  • 1 cup unsweetened applesauce
  • 1 cup finely chopped granny smith apple (about 1 medium apple)
  • ½ cup melted butter
Instructions
  1. Preheat over to 375F
  2. Grease or use 12 cupcake liners
  3. Peel and finely chop 1 cup green apple
  4. Combine flour, sugar, baking powder, cinnamon and salt in small bowl
  5. In medium sized bowl add egg, applesauce, melted butter, chopped apple and mix
  6. Add the dry ingredients into the wet ingredients and stir until just blended
  7. Pour even amount into the cupcake pan
  8. Optional: Sprinkle a small amount of sugar on top of each prepared muffin before baking
  9. Bake for 20 minutes or until toothpick comes out clean
  10. Transfer to cooling rack and allow to cool 5 minutes
  11. Makes 12 muffins

The Best Banana Cake

Calling all Banana and chocolate lovers!

Check out this recipe for The Best Banana Cake

Some things are just meant to be together, banana and chocolate being one of those things. This is by far one of my most favorite cakes and instead of adding the chocolate into the cake I add chopped chocolate chips right into the cream frosting. By sprinkling the banana cake with chocolate shavings you get the perfect amount of chocolate and banana in each bite with out the chocolate over powering the lovely banana flavor. I prefer milk chocolate shavings, but you may use whichever chocolate that you desire. If your a huge dark chocolate fan, but also live with a milk chocolate fan no problem, just individually add the shavings to each slice verses over the entire cake. Live with a non chocolate lover? No problem again, simply tell them to talk to a psychologist because that is certifiably crazy (Kidding, kind of 😉 )

Ingredients
  • Cake:
  • 2 tablespoons unsalted butter at room temperature
  • ⅔ cup sugar
  • ½ cup sour cream
  • 1 egg
  • 1 teaspoon vanilla extract
  • 3 very ripe bananas
  • 1 cup flour
  • ¼ teaspoon salt
  • ½ teaspoon baking soda
  • Cream Frosting:
  • 2 tablespoons unsalted butter at room temperature
  • 1¼ cup confectioner sugar
  • ¼ cup heavy cream
  • 1 tablespoon vanilla extract
  • Additional:
  • Chocolate chips
  • 9 inch round cake pan
  • butter for greasing pan
Instructions
  1. Preheat oven to 375F
  2. Grease a 9 inch round cake pan with butter
  3. In medium bowl add flour, baking soda and salt and set aside
  4. In separate bowl cream together butter, sugar and sour cream
  5. Add to the cream mixture egg, vanilla and mix
  6. Add mashed bananas to the mixture
  7. Finally add the dry ingredients to the wet and mix well
  8. Bake at 375F for 28 minutes or until toothpick comes out clean in center
  9. Frosting: (special note: I make after removing cake from oven since you have to wait till the cake is completely cooled to apply frosting)
  10. Cream together with hand mixer butter and confectioner sugar
  11. Slowly add in heavy cream and vanilla extract while mixing
  12. Spread frosting over completely cooled cake
  13. Last but not least:
  14. Chop desired chocolate chips and sprinkle over entire cake or individual slices

Cranberry Granola Treat Bars

Ingredients
  • 3 cups Cinnamon Toasted Oats
  • 2 cups whole grain oats cereal (O's)
  • ¾ cup sweetened dried cranberries, roughly chopped
  • 1 10 ounce bag of marshmallows, plus ¾ cup mini marshmallows
  • ¼ cup unsalted butter
Instructions
  1. Butter a 13x9 inch pan
  2. In large bowl mix together the the toasted oats, O's, chopped cranberries and set aside
  3. In large saucepan add the butter and melt over low heat
  4. Add the 10 ounce bag of marshmallow to the melted butter, stirring constantly until marshmallow is completely melted
  5. Add the cereal mixture to the melted marshmallow and mix
  6. Add the additional mini marshmallows and mix gently
  7. Pour mixture into buttered dish and using clean hands or parchment paper press the mixture evenly and firmly into the pan
  8. Allow the bars to cool before cutting and store in an air tight container

Can you remember the last time you played truth or dare?… Are you typically the one to pick truth or dare? Myself, I’m a truth teller and I inherited a gene that allows me to tattle on myself. So naturally being a non dare devil, I always would pick truth during this fun game.

I find the muffins to be irresistible fresh out of the oven, as do my little ones who tend to inhale them very quickly while still piping hot! Ingredients
  • 3 large ripe bananas, mashed (small bananas use 4)
  • 3⁄4 cup sugar, plus more for topping
  • 1 egg, slightly beaten
  • 1⁄3 cup melted butter
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon cinnamon
  • 1⁄2 teaspoon salt
  • 1 1⁄2 cups flour, sifted
  • 1 cup chocolate chips
Instructions
  1. Preheat oven to 375F
  2. In a large bowl sift together your flour, baking powder, baking soda, cinnamon and place aside
  3. In a separate bowl mix together your mashed bananas, slightly beat egg and ¾ cup sugar
  4. Add your melted butter to the wet ingredients
  5. Combine the wet and dry ingredients mixing just until combined (do not over mix)
  6. Gently fold in chocolate chips
  7. Pour batter into greased or lined muffin tin filling ¾
  8. Sprinkle each muffin with a desired amount of sugar on top before going into the oven
  9. Bake at 375F for 18-20 minutes
