Chicken Meatballs with Spinach and Feta


Ingredients

  • 1 pound ground chicken
  • 1/2 of 1 small onion
  • 1 garlic clove, minced
  • 3/4 cup crumble feta
  • 1 1/2 cup chopped spinach
  • 1 egg
  • Zest of one small lemon
  • Salt and pepper
  • Olive oil

Instructions

  1. Preheat oven to 400F
  2. Line baking pan with parchment paper and set aside
  3. Mix all the MEATBALL ingredients (EXCEPT, olive oil) until incorporated
  4. Form 1.5 inch meatballs and place on baking pan
  5. Lightly drizzle or spray the meatballs with olive oil
  6. Bake for 15 minutes or until desired internal temperature
