After creating my favorite panini in the world, caramelized onion ham and cheese panini, I wanted a perfect soup to compliment it. This cream of asparagus soup was a match made in Heaven. While dipping the panini into the soup I thought to myself “I’m eating vegetables with the panini, so now its healthier right??!!” Maybe it doesn’t remove all the calories from the panini, but it sure does taste like it’s good for the soul.

The magical moment of indulgence abruptly ended when my toddler awoke from his nap. Thankfully, I had already devoured all of the panini, so I served him the asparagus soup chilled for lunch. He devoured the soup quickly and asked for more, loving it. This asparagus soup is simple and tasty served warm or cold.

The birds are starting to chirp, the cold is starting to break and spring is going to show up soon! While we are all waiting very patiently for this to occur we can still pretend it’s Spring time by eating all of the seasonal food our heart desires.

Cream of Asparagus Soup


Ingredients

Scale
  • 1 pound fresh asparagus, trimmed and cut into 1 inch pieces
  • 1/2 yellow onion
  • 1 3/4 cups chicken broth
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 1 teaspoon salt
  • Pinch of ground black pepper
  • 3/4 cup of milk
  • 1/2 cup sour cream
  • 1 tablespoon fresh lemon juice

Instructions

  1. In a large sauce pan combine asparagus chopped onion and 3/4 cup chicken broth
  2. Cover and bring to a boil
  3. Then reduce heat to low and cook for 10 minutes or until vegetables are tender
  4. Remove all the vegetable mixture and puree in a blender and set aside
  5. In the same sauce pan melt the butter on med/low heat
  6. Add flour whisking
  7. Add salt and pepper
  8. Cook stirring constantly for 2 minutes
  9. Whisk in remaining 1 cup of chicken broth on medium heat and bring to a boil
  10. Stir in the asparagus puree and the milk
  11. Put the sour cream in a small bowl and ladle in some of the hot soup
  12. Add the sour cream mixture and lemon juice to the soup
  13. Do not boil only heat to serving temperature at this point
