Ingredients

- 2 pounds of pork tenderloin (I use two small tenderloins from Trader Joe’s)
- 1/4 cup soy sauce
- 1.5 tablespoons of yellow mustard
- 2 tablespoons of olive oil
- 3 tablespoons of maple syrup
- 1 teaspoon onion powder
- 1.5 teaspoons garlic powder
- 1 Shallot chopped
Instructions
- Turn crockpot on to low
- In large measuring cup add all the ingredients for the marinade and whisk
- Place tenderloin in crockpot and pour over the marinade
- Cook on low for about 3-4 hours for two small tenderloins
- Slice and serve pouring the juices over the meat
- Recommended but not necessary: Half way through cooking time turn the pork over to ensure even cooking, pouring the juices all over
