Cucumber Sandwich Recipe

Ingredients

  • 1 package of dark rye bread
  • 1 brick cream cheese
  • 3 tablespoons of mayonnaise
  • 5 tablespoons yellow onion
  • 3/4 cup seedless cucumber
  • Salt and pepper to taste
  • Dill to taste plus more for garnish

Instructions

  1. Soften cream cheese to room temperature
  2. Add mayonnaise and cream cheese to medium sized bowl and mix well
  3. Finely chop onion
  4. Peel and finely chop cucumber
  5. Add onion, cucumber, dill, salt and pepper
  6. Refrigerate over night
  7. Cut bread in small rectangular or square pieces
  8. Spread mixture onto each bread and sprinkle sides with dill to finish
  9. Makes 12-15 mini sandwiches
  10. Double recipe if needed
