So it never fails… every time there is a thunderstorm my toddler is up crying. The recent storm decided to make a loud clash of thunder around five a.m. this morning. So after attempting to settle my newborn at four am and she refused to sleep anywhere but in my arms I decided to give up on sleep and just snuggle my babies helping them rest in my bed. That’s after Katia awoke at 10 p.m., midnight and 1 a.m. It’s actually pretty impressive that I’m typing let alone walking or talking today. I feel like I’m drunk twenty four seven and not the fun buzzed part of being drunk, but the part where you get tired and don’t feel well. Katia really needs to start loving sleep soon or bumping into walls will become a normal start to my daily life.

- 2 containers of Fresh Bruschetta Sauce (refrigerated section)
- Pesto filled tortellini (dried pasta section)
- Whole milk mozzarella (refrigerated section by cheese)
- A little salt, a pinch of pepper to taste and Voila
How to assemble Trader Joe’s Bruschetta Pasta
You know what else never fails, those sleep deprived days typically happen when we have a family party or get together to attend. To combat these hectic times I love easy side dishes that you can assemble the night before. Don’t let the simplicity of this dish fool you, bruschetta pasta is simple, delicious and a real crowd pleaser. Hands down, this recipe is one of my most requested side dish for barbeques. Toddlers, big kids and adults love it!

Ingredients
- 1 bag of Trader Joe’s tortellini with pesto filling
- 2 containers of Trader Joe’s Fresh Bruschetta Sauce
- 1 16 ounce whole milk mozzarella
- Salt and pepper
Instructions
- Cook pasta according to package 16 minutes
- Drain pasta in colander and set aside the pasta to cool to room temp (you can run cool water over to speed up this step)
- Cut the mozzarella into tiny bite sized pieces
- Take the cooled pasta, mozzarella and bruschetta mixing to combine
- Add salt and pepper to taste
- Cover and refrigerate the pasta for a minimum of 3 hours prior to serving, but preferably over night
- Halfway through refrigerating, mix the dish to evenly absorb all the juices into the pasta
