Well, the sleepless nights are about to become even more sleepless. I just started crib training my six month old, she is refusing to sleep on her back and currently likes to smother her face while on her belly so I’m pulling out all the tricks to keep her safe. I Love this little beauty more than words can explain and she really has been a ray of sunshine to our family the past six months. Through all of my sons health scares and continued care she smiles and giggles right at the perfect moments, snapping us out of all the worries that are consuming us daily. She is the blessing that I always dreamed of, completing our family and the perfect start to the journey that is to come.
In between being overly consumed with everyday family life I found my self famished. With my pantry and refrigerator depleted all that I could find was snacks that would not satisfy my craving. I wanted something fresh, I started scavenging the kitchen in despair. After five minutes of searching I found a tomato and all of the ingredients to throw together these Five Minute Broiled Parmesan Tomato Garlic Baguettes. I literally went out the next day and bought more ingredients to make these for lunch again. They are divine and my new favorite quick lunch time creation. Perfect for a mommy that doesn’t have all the time in the world, but still needs to nourish myself as my kids take their nap.
Your going to love these Five Minute Broiled Parmesan Tomato Garlic Baguettes for your perfect lunch, snack or side to a favorite pasta dish. You can also serve them as an appetizer, actually I don’t think their is a wrong time to enjoy these perfect little broiled to perfection baguettes.

- Baguette loaf
- Parmesan cheese
- Tomato
- Dried basil
- Salt and pepper
- Olive oil
- Fresh parsley roughly chopped
- Preheat broiler on low
- Cut bread loaf into small slices slightly bigger than your tomato
- Layer on parmesan cheese, tomato, dried basil, salt and pepper
- Lightly drizzle breads with olive oil
- Add more parmesan cheese on top
- Broil on low for 2-3 minutes watching very closely
- Enjoy!
