Ghost Cookie Pops


  • 15 Joe Joe sandwich cookies from Trader Joe’s (double chocolate or your preference)
  • 1 10 ounce bag of white chocolate chips
  • 3 tablespoons of milk chocolate chips
  • Lollipop sticks(local craft store)
  • White curling ribbon
  • Parchment paper
  • Baking sheet
  • Optional:
  • Plastic squeeze bottle
  • Styrofoam for standing ghost
  • Black paper filler
  • Halloween bucket or pail


  1. Melt white chocolate with double boiler
  2. Open each cookie placing the lollipop stick in the cream filling and close the cookie back together
  3. Dip each cookie into the melted white chocolate and allow excess to drip off before transferring to baking sheet lines with parchment paper
  4. Melt milk chocolate either in double boiler or microwave adding 1/2 teaspoon of canola oil if desired (helps smooth out chocolate so its easier to work with)
  5. Either using a plastic squeeze bottle or a lollipop stick dipped in the chocolate make Ghost face, draw to circles for the eyes and an oval for the mouth
  6. Place aside to cool or to speed up the process place in freezer
  7. Curl ribbon and cut even pieces, tie two pieces of ribbon for each pop
  8. Place in styrofoam to display or store till ready to eat
