1 1/4 cup chicken stock or broth
1.5 pounds of baby potatoes
1 teaspoon salt (plus more to garnish)
2 Tablespoons melted butter
1/2 teaspoon dried parsley
1/2 teaspoon garlic powder
1/4 teaspoon dried thyme
black pepper to taste
Optional: fresh copped chives or parsley
Instructions
1. Halve the potatoes and add potatoes to the Instant Pot
2. Add broth or stock and 1 teaspoon salt
3. Put the lid on (make sure vent is in sealed position) and select pressure cook for 2 minutes
4. Natural pressure release for 5 minutes, then quick release excess moisture
5. Turn off the instant pot and drain the liquid from the pot
6. Add the melted butter, parsley, garlic, thyme, and season with salt/pepper to a small bowl and mix
7. Pour the melted butter over the potatoes, mixing the potatoes to coat evenly
8. Serve warm with fresh chopped chives or parsley to garnish
