Ingredients

- 2 pounds red potatoes
- 8 bacon slices
- 2 teaspoons of garlic salt (Note: I use Trader Joe’s garlic salt which has a nice mild flavor)
- 1/4teaspoon pepper
- 1/2 cup sour cream
- 2 heaping tablespoons of mayonnaise
- 1 teaspoon of Trader Joe’s Jalapeno Pepper Hot Sauce
- 2/3 cup of shredded cheddar cheese
- 1 tablespoon of chopped parsley (special note: can substitute for green onion)
Instructions
- Cut potatoes into small bite size pieces leaving the skins but cutting out any bad parts
- Place in large stock pot and cover with cold water and salt
- Bring potatoes to boil and cook just until fork tender about 5-7 min
- Drain and allow to cool
- Cut bacon into small bite size pieces and cook in medium sized skillet until crispy
- Place on paper towel and allow to cool
- Once bacon and potatoes are cooled mix sour cream, mayonnaise and hot sauce in small bowl
- Toss together the potatoes, garlic salt, pepper, bacon, sour cream mixture, cheddar cheese and parsley
- Refrigerate until serving
- (Special Note: you can add extra cheddar cheese, bacon and parsley/green onion to garnish with before serving)
