Loaded Potato Salad Recipe


Ingredients

  • 2 pounds red potatoes
  • 8 bacon slices
  • 2 teaspoons of garlic salt (Note: I use Trader Joe’s garlic salt which has a nice mild flavor)
  • 1/4teaspoon pepper
  • 1/2 cup sour cream
  • 2 heaping tablespoons of mayonnaise
  • 1 teaspoon of Trader Joe’s Jalapeno Pepper Hot Sauce
  • 2/3 cup of shredded cheddar cheese
  • 1 tablespoon of chopped parsley (special note: can substitute for green onion)

Instructions

  1. Cut potatoes into small bite size pieces leaving the skins but cutting out any bad parts
  2. Place in large stock pot and cover with cold water and salt
  3. Bring potatoes to boil and cook just until fork tender about 5-7 min
  4. Drain and allow to cool
  5. Cut bacon into small bite size pieces and cook in medium sized skillet until crispy
  6. Place on paper towel and allow to cool
  7. Once bacon and potatoes are cooled mix sour cream, mayonnaise and hot sauce in small bowl
  8. Toss together the potatoes, garlic salt, pepper, bacon, sour cream mixture, cheddar cheese and parsley
  9. Refrigerate until serving
  10. (Special Note: you can add extra cheddar cheese, bacon and parsley/green onion to garnish with before serving)
