Meal Prep Idea With Waffled Veggies


Ingredients

Scale
  • 2 cups shredded zucchini (strained of excess moisture)
  • 2 cups shredded carrots
  • 1/3 cups green onions (chopped)
  • 2 eggs (whisked)
  • 3/4 cups bread crumbs
  • 1/3 cups parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/4 teaspoons pepper
  • Baking spray (Canola oil)
  • Sour cream (or greek yogurt)

Instructions

  1. Preheat waffle iron to medium heat
  2. Mix all ingredients in large mixing bowl
  3. Pack about 1/3 cup of mixture and form a ball
  4. Spray waffle maker with baking spray
  5. Place veggie ball in center of waffle iron and press down
  6. Cook until a golden brown, remove gently lifting the sides with a fork and using a spatula transfer to paper towel, repeat till all patties are cooked
  7. Serve with toppings: green onion, sour cream/ greek yogurt
