Ingredients

- 2 cups shredded zucchini (strained of excess moisture)
- 2 cups shredded carrots
- 1/3 cups green onions (chopped)
- 2 eggs (whisked)
- 3/4 cups bread crumbs
- 1/3 cups parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/4 teaspoons pepper
- Baking spray (Canola oil)
- Sour cream (or greek yogurt)
Instructions
- Preheat waffle iron to medium heat
- Mix all ingredients in large mixing bowl
- Pack about 1/3 cup of mixture and form a ball
- Spray waffle maker with baking spray
- Place veggie ball in center of waffle iron and press down
- Cook until a golden brown, remove gently lifting the sides with a fork and using a spatula transfer to paper towel, repeat till all patties are cooked
- Serve with toppings: green onion, sour cream/ greek yogurt
