Ingredients

- 4 tablespoons of butter
- 5 large eggs
- 1 cup of cottage cheese
- 1/2 cup of cheddar cheese plus more for topping
- 3 ounces of a 4ounce can of diced green chilies
- 1/4 cup of flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- pinch of pepper
- 2 mini muffin pans
Instructions
- Preheat oven to 350F
- Melt butter and grease 2 mini muffin pans brushing with butter generously (about 2 tablespoons) and set aside
- In a medium bowl whisk together eggs, cottage cheese, cheddar cheese, chiles, flour, baking powder, salt, pepper and remaining 2 tablespoons of butter
- Spoon in egg mixture just over half way into greased mini pan
- bake for about 12 minutes
- Makes About 48 mini eggs
