I have this one girlfriend that never liked chocolates or sweets very much, lately we have not had much time to catch up or sit down and talk with out the kids. Well, when we finally did she let me know that she now likes chocolate and sweets and I’ve never felt closer to her. I have never met someone who did not like chocolate and was a female, but I was convinced she just needed to be friends with me long enough and that would change. I think my one recipe for The Perfect Chocolate Chip Cookies helped to push her over the edge. Life is all about enjoying each others company, eating amazing foods and being with people that just make you feel loved. These Perfected Double Chocolate Muffins are a deliciously sinful way to have your sweet tooth satisfied, sharing with friends is encouraged.
Personally, I use white chocolate chips that contain alcohol so when they bake the chocolate slightly burns giving it a surprisingly delicious flavor. I could only compare the taste to roasted marshmallows. You may also use white chocolate chips not containing alcohol and these muffins are still amazing, whichever your heart desires. Highly recommending you give the muffins a nice sprinkle of sugar on top before baking. Perfected Double Chocolate Muffins

Ingredients
- 2 cups all purpose flour
- 1 cup of white sugar, plus more for topping
- 1 1/4 cups of white chocolate chips
- 1/2 cup unsweetened cocoa powder
- 1 teaspoon of baking soda
- 1/2 teaspoon of cinnamon
- 1/2 teaspoon of salt
- 1 teaspoon vanilla extract
- 1 egg
- 1 cup of sour cream
- 1/2 cup milk
- 1/2 cup canola oil
Instructions
- Preheat oven to 400F
- Fill muffin tin with 18 paper liners
- In large bowl combine flour, white chocolate chips, cocoa powder, baking soda, cinnamon and salt
- In medium bowl whisk egg, vanilla, sour cream, milk, and canola oil
- Pour wet ingredients into dry and mix just until incorporated (do not over mix)
- Fill muffin liners 3/4 way and sprinkle the top with desired amount of sugar
- Bake for 18 minutes or until toothpick inserted in the center comes out clean
