Roasted Cauliflower Soup with Aged Cheddar and Bacon is food for the soul

It is the end of winter here in Illinois, or so we keep thinking right before we are hit with more snow. As much as I can not stand the cold, here it is in full force not letting up. After eating soup all season long I wanted one that would be warming to the soul. This definitely lifted my spirits and warmed me up for a whole fifteen minutes. Soon after I hibernated back to a blanket on the couch, watching Peter Pan with my toddler. As I sit here dreaming of dinner time; when I will be reheating this soup I thought to myself “How perfect, simple garlic rubbed crostini’s would compliment this

Soup is like a Chicagoans anti depressant! After eating soup you’ve forgotten all about how you felt like an icicle getting out of the bed that morning or a human snowball running out of the shower. It is very powerful stuff,  makes me so warm I even get daring enough to take off my socks! Never under estimate the power of soup. It can take someone’s mood from frigged and cold to heartwarmingly happy!

Roasted Cauliflower Soup with Aged Cheddar & Bacon

Roasted Cauliflower soup with aged cheddar and bacon


Ingredients

Scale
  • 6 bacon slices
  • 2 tablespoons of bacon fat
  • 1 small head cauliflower cut into small florets
  • 2 tablespoons olive oil
  • salt and pepper to taste
  • 2 garlic cloves chopped
  • 1 teaspoon chopped thyme
  • 32 ounces low sodium chicken broth
  • 7 ounces of aged cheddar
  • 1 cup half and half

Instructions

  1. preheat oven to 400F
  2. Toss the florets with olive oil salt and pepper and evenly spread them onto a baking sheet and bake till lightly golden brown about 25 min
  3. Cut bacon into even small pieces
  4. Cook in large pot until crispy and remove from pan and set aside
  5. In same pot with bacon fat add minced garlic and thyme and sauté for about a minute
  6. Add the broth slowly while stirring the bottom of the pan to get all that good flavor
  7. Now add the cauliflower and bring to a boil then reduce heat and simmer covered for 20 min
  8. puree soup with an immersion blender till desired consistency
  9. mix in cheese on med to low heat but do not boil
  10. mix in the half and half
  11. Season with salt and pepper to taste
  12. Top with bacon and serve

  2. One of the best soups I’ve ever had!!!! My girls (6 and 4 years old), fiancé and I didn’t leave a drop in our bowls! Delicious! Made a blue cheese wedge salad to go with it.. Next time I will def try it with your garlic rubbed crostini as well mmmm! Thanks!!
