This incredibly easy grilled cheese starts with Trader Joe’s Spinach Artichoke Dip (see below for details and review). After you have heated the dip per instructions, you’re ready to start assembling your grilled cheese.
First, generously butter up your favorite bread and pat on grated parmesan. The parmesan is not necessary, but enhances the sandwich with a crunchy and flavorful crust. Second, layer on a provolone cheese slice (or mozzarella) to protect the bread from the wetness of the dip. Third, add on the warmed spinach artichoke dip. Next, add another slice of cheese on top of the dip. I’ve also added less cheese and used fresh spinach leaves, layering them over the dip to protect the bread. Finally, top with another slice of buttered bread and get cooking.

What to serve with your grilled cheese
I’m highly recommending fresh tomato slices. Simply add a little salt and pepper to your tomatoes and voila. I do not recommend adding the tomatoes to your grilled cheese as this would add to much wetness to this already creamy sandwich. Homemade tomato soup is a classic and a lovely addition to this meal as well. Enjoy!

Ingredients
1 box Trader Joe’s Spinach Artichoke Grilled Cheese
French, Italian or other favorite bread
Provolone or mozzarella slices
Butter
Parmesan (optional)
Instructions
Heat up the spinach dip in microwave per instructions on the box
Generously butter the bread and pat on grated parmesan
Layer on a provolone cheese slice (or mozzarella)
Add on enough warmed spinach artichoke dip to coat the cheese
Add another slice of cheese on top of the dip
Top with another slice of buttered bread
Heat a non stick skillet over medium high heat
Once pan is preheated add the sandwich into the pan, cook for 2-3 minutes per side or until a light golden brown color
Serve immediately and enjoy!
