Trader Joe’s Blueberry Muffin Mix

Ingredients
1 Box Trader joe’s Blueberry Muffin Mix
3 eggs
1/2 cup milk
1 1/4 sticks unsalted butter (10 tablespoons)
Optional, but recommended additional ingredients:
Zest from 1 lemon
Fresh blueberries
Instructions
Preheat oven 350F
Pour dried blueberries into a small bowl and cover with water
Allow blueberries to sit for 10 minutes stirring occasionally to hydrate
Place butter in a microwave safe bowl and heat in 20-30 second intervals until melted and set aside
Spray muffin pan with nonstick spray or line with paper liners or use silicon muffin molds
In a large bowl mix together the milk and eggs and optional lemon zest
Add the melted butter and muffin mix to the large bowl, stir to combine all ingredients, DON’T OVER MIX
Drain the dried blueberries and carefully fold into the mix, along with optional fresh blueberries
Fill cupcake pan/liners 2/3 way full
Bake for 30 minutes or until cooked through
Allow muffins to cool and enjoy!
Notes
Original heating instructions on the box are 400F for 20 minutes. You may bake the muffin this way, but watch carefully at the end. This is a very high heat for muffins and can result in burned or dried out muffins if not watching closely.
