Whisking Mama’s Baked Chicken Parmesan


  • 3 large boneless skinless chicken breast halved lengthwise or 6 split chicken breast
  • 4 tablespoons olive oil
  • 2 garlic cloves (or 3 if you really like garlic)
  • 3/4 cups bread crumbs
  • 1/2 cup grated parmesan (or parmesan/ramano blend if you prefer) plus more for topping
  • 1 teaspoon of dried basil
  • Salt/Pepper
  • 1/2 pound of mozzarella cheese, sliced
  • 1 pounds package of linguine noodles
  • 3 tablespoons of butter
  • Fresh chopped parsley (or basil)
  • Quick Marinara Sauce:
  • 1 15 ounce can of diced tomatoes
  • 12 garlic cloves
  • 1 tablespoon olive oil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon of salt or to taste
  • Pinch of pepper or to taste


  1. Preheat oven to 400F
  2. Halve Chicken breast if needed
  3. Salt and pepper each side of the chicken
  4. Prepare 2 bowls, first bowl with olive oil and pressed or minced garlic, second bowl with bread crumbs, parmesan and basil mixture
  5. Dip the chicken into the oil and lightly shake off excess oil
  6. Dip the chicken into the bread crumb mixture and generously coat the chicken
  7. Place chicken in oven safe bake ware
  8. Once all the chicken is on the pan take any left over bread crumb mixture and sprinkle right on top the chicken breast
  9. Bake at 400F for 20 minutes then add your marinara sauce(instruction below for quick marinara) and top with mozzarella cheese slices
  10. Continue baking for 10 more minutes
  11. Cook linguine according to package
  12. Add butter, salt and pepper to linguine noodles
  13. Serve Baked Chicken Parmesan over linguine
  14. Top with fresh parmesan and parsley (or fresh basil)
  15. Quick Marinara Sauce:
  16. Using food processor, mini prep or blender chop garlic
  17. Add 1 can of diced tomatoes, spices and olive oil
  18. Pulse lightly till desire consistency
