Roasted Potatoes with Garlic and Fresh Parmesan

  • 1.5 pounds Yukon gold or fingerling potatoes
  • 2 tablespoons olive oil
  • 3 cloves of garlic minced
  • 1/2 teaspoon salt or to taste
  • 1/4 teaspoon black pepper
  • 1/3 cup freshly grated parmesan cheese
  • 3 tablespoons roughly chopped fresh parsley
  • parchment paper


  1. Preheat oven to 400F
  2. Line baking sheet with parchment paper
  3. Rinse and then cut potatoes into small bite sized pieces, pat dry
  4. In large bowl mix potatoes with garlic, olive oil, salt and pepper
  5. Spread evenly on baking sheet
  6. Bake for about 35-40 minutes turning halfway through
  7. After removing from oven transfer to serving dish and mix in fresh parmesan and chopped parsley
  8. Enjoy!
