Ingredients

- 1.5 pounds Yukon gold or fingerling potatoes
- 2 tablespoons olive oil
- 3 cloves of garlic minced
- 1/2 teaspoon salt or to taste
- 1/4 teaspoon black pepper
- 1/3 cup freshly grated parmesan cheese
- 3 tablespoons roughly chopped fresh parsley

Instructions
- Preheat oven to 400F
- Line baking sheet with parchment paper
- Rinse and then cut potatoes into small bite sized pieces, pat dry
- In large bowl mix potatoes with garlic, olive oil, salt and pepper
- Spread evenly on baking sheet
- Bake for about 35-40 minutes turning halfway through
- After removing from oven transfer to serving dish and mix in fresh parmesan and chopped parsley
