Dreams and future goals are all appropriate things to plan for, but we can’t plan for the curve balls that life throws at us. That’s why it’s vital to share stories like Kristy’s, I’m uncovering a story of an inspiring woman. Kristy’s unplanned circumstances included having a special needs child. Buffalo Chicken Stuffed Sweet Potatoes with Ranch Dressing

Buffalo Chicken Stuffed Sweet Potatoes with Ranch Dressing


Ingredients

Scale
  • 2 medium chicken breasts about 1 pound
  • 4 large sweet potatoes
  • 2 green onions thinly sliced
  • Creamy Buffalo Sauce
  • 3 Tbsp. mayonnaise
  • 1/2 cup + 1 Tbsp. hot sauce
  • 1 Tbsp. ranch dressing
  • 1/2 tsp. garlic powder
  • 1/2 tsp. salt
  • To Serve
  • Ranch dressing
  • Celery sticks
  • Blue cheese crumbles

Instructions

  1. Preheat oven to 400F
  2. Poke cleaned sweet potatoes with fork, place on baking sheet and bake in oven
  3. Season chicken breasts generously on both sides with salt
  4. Place chicken in a baking dish and bake in oven
  5. After 20-25 minutes, or when thermometer inserted in the thickest part of chicken breasts reaches 160F remove chicken from oven
  6. Continue to bake sweet potatoes another 20-30 minutes or until tender
  7. Shred chicken, either by hand with two forks In a small bowl
  8. Mix shredded chicken and sauce together
  9. Add green onion to chicken mixture and combine
  10. Slice cooked sweet potatoes in half and top with buffalo chicken mixture
  11. Top with more ranch dressing and garnish with green onions
  12. Sprinkle with blue cheese crumbles if desired, serve with celery sticks (optional)
