Keto Quesadillas are incredibly delicious and easy to make. Below you will find all the ingredients to assemble your very own Trader Joe’s Keto quesadilla.

Don’t live near a Trader Joe’s, no problem! Feel free to swap the Trader Joe’s items for your favorite similar products.

Traditional quesadillas consist of corn or flour tortilla shells. For this Keto friendly version of a quesadilla we are using Trader Joe’s premade Cauliflower thins. Trader Joe’s Cauliflower thins are gluten free, low carb, and keto friendly. These delicious thins are a superb alternative to traditional tortilla shells. Personally, even when I’m not on the ketogenic diet, this is my go to quick lunch or snack.

Trader Joe’s Cauliflower thins make awesome keto quesadillas and wonderful breakfast tacos. Also, you may replace traditional gluten breads with cauliflower thins for a low carb sandwich. Next time your in the mood for a B.L.T. (bacon, lettuce and tomato) sandwich use these delicious thins and add some good organic mayo. No matter how you choose to indulge, Trader Joe’s cauliflower thins are ridiculously yummy.

Keto Quesadilla Recipe

Ingredients

Scale

2 Trader Joe’s cauliflower thins

1/3 cup shredded cheese blend of choice

Hot sauce of choice

1 tablespoon sour cream

Optional: Chopped green onion or chives to garnish


Instructions

Heat non stick pan on medium to high heat

Heat cauliflower thins on one side for about 1-2 minutes, just until warm

Flip the cauliflower thins over and add cheese and desired amount of hot sauce to one side

Place the empty cauliflower thin on top of the cheese and press down

Heat on both sides until warm and lightly browned

Top with sour cream, green onion and serve immediately
