How to pick the perfect cabbage
First pick the cabbage with your eyes, looking for a bright color. Also, make sure there are crisp leaves and no bruising. Then you will want to pick it up and it should feel heavy in weight for it’s size. When holding the cabbage you want firmness. If you feel a sponge like texture this is a sign it has begun rotting inside. Typically, larger sized cabbages are known to be sweeter, and smaller tend to be more bitter.
How to make Cabbage Steaks
There couldn’t be a more simple side dish then this cabbage steak recipe. Simply start by slicing your cabbage making 1/2-3/4 inch thick round slices. Place the rounds onto a non stick baking pan. Either brush or spray olive oil (We love Trader Joe’s olive oil spray) onto one side of the cabbage steaks. Now, add your seasoning and then turn repeating on the other side of the cabbage. Place the cabbage into the oven at 400F and roast for 25-28 minutes. You’ll want to see a darker crispy edge (our favorite part) and a very light golden color throughout.

Ingredients
1 medium cabbage
Olive oil or olive oil spray
Garlic powder
Salt and pepper
Optional: fresh chopped thyme, lemon and parmesan
Instructions
Preheat oven to 400F
Slice the cabbage into 1/2 – 3/4 inch thick round slices and place them onto a non stick baking pan
Either spray or brush the olive oil on one side of the cabbage and season with garlic powder, salt, pepper and optional thyme
Then flip the cabbage steaks over and repeat coating with olive oil and spices
Roast the cabbage steaks for 25-28 minutes watching closely at the end for crispy edges and a very light golden color on top, remove from oven and serve
Optional: top with a squeeze of lemon and sprinkle of parmesan
