This recipe for Whisking Mama’s Baked Chicken parmesan is an easy and delicious meal that the entire family will love!

This must be a dream…blogging about food that is! As I sit here typing this and my two babies are upstairs sleeping, I feel blessed. Blessed that they are sleeping together for a whole twenty minutes and blessed that I have found time for something I’m so passionate and in love with doing. Sometimes life gets frustrating and your toddler is sick, there is girlfriend drama and you struggle keeping up with life’s daily tasks, appointments and chores, but you just have to stop yourself and say what am I grateful for. Well, I have a lot to be thankful for including my friends who always are there for me, family who I know loves me unconditionally, all three of my adorable babies and my passion for blogging about food and life. Amen! Just take a moment for yourself, put aside everything you would change about your life and think of all you have that is good. I bet you can think of at least three! 🙂
I prefer my Baked chicken Parmesan simple, light and flavorful. This recipe originates from Whisking Mama’s Favorite Baked Chicken recipe that is so tasty and healthy. I added to it a little of this and a little of that for my perfected version of Baked Chicken Parmesan. No need to over load the linguine with sauce, I simply add a little butter and salt to my pasta. Top the linguine with the baked chicken and a sprinkle fresh chopped parsley for the finishing touch. In the end you can really taste all the different flavors that pair beautifully in this dish.

Whisking Mama’s Baked Chicken Parmesan
- Total Time: 45 mins
- Yield: 4-6 1x
Ingredients
- 3 large boneless skinless chicken breast halved lengthwise or 6 split chicken breast
- 4 tablespoons olive oil
- 2 garlic cloves (or 3 if you really like garlic)
- 3/4 cups bread crumbs
- 1/2 cup grated parmesan (or parmesan/ramano blend if you prefer) plus more for topping
- 1 teaspoon of dried basil
- Salt/Pepper
- 1/2 pound of mozzarella cheese, sliced
- 1 pounds package of linguine noodles
- 3 tablespoons of butter
- Fresh chopped parsley (or basil)
- Quick Marinara Sauce:
- 1 15 ounce can of diced tomatoes
- 1–2 garlic cloves
- 1 tablespoon olive oil
- 1/2 teaspoon garlic powder
- 1/2 teaspoon dried basil
- 1/4 teaspoon dried oregano
- 1/4 teaspoon of salt or to taste
- Pinch of pepper or to taste
Instructions
- Preheat oven to 400F
- Halve Chicken breast if needed
- Salt and pepper each side of the chicken
- Prepare 2 bowls, first bowl with olive oil and pressed or minced garlic, second bowl with bread crumbs, parmesan and basil mixture
- Dip the chicken into the oil and lightly shake off excess oil
- Dip the chicken into the bread crumb mixture and generously coat the chicken
- Place chicken in oven safe bake ware
- Once all the chicken is on the pan take any left over bread crumb mixture and sprinkle right on top the chicken breast
- Bake at 400F for 20 minutes then add your marinara sauce(instruction below for quick marinara) and top with mozzarella cheese slices
- Continue baking for 10 more minutes
- Cook linguine according to package
- Add butter, salt and pepper to linguine noodles
- Serve Baked Chicken Parmesan over linguine
- Top with fresh parmesan and parsley (or fresh basil)
- Quick Marinara Sauce:
- Using food processor, mini prep or blender chop garlic
- Add 1 can of diced tomatoes, spices and olive oil
- Pulse lightly till desire consistency
- Prep Time: 15 mins
- Cook Time: 30 mins
