Summer picnics are special to those who spend three quarters of the year cuddling under blankets to keep warm. By the time it gets warm, half of those days, we’re all still unable to enjoy the weather because it’s raining outside. We don’t make certain foods as often as those who live in warmer climates, like this potato salad which is the perfect side for a barbeque on beautiful summer days. When the weather finally breaks, out comes our barbeques and bags. This is an exciting time that we all appreciate more than you could imagine, especially after the weather we had this past year.
Secret Ingredient in Loaded Potato Salad
Any dish that calls for bacon and cheese is perfect in my opinion. This loaded potato salad has all the flavors of a loaded baked potato in a cold salad. The perfect summer side for any meal or as your new side to bring to parties. The secret ingredient that adds an extra pop of flavor is the hot sauce I get, Jalapeno Pepper Hot Sauce from Trader Joe’s. I recommend this specific hot sauce because it adds more flavor than heat, allowing this to be a kid friendly dish.

Loaded Potato Salad Recipe
- Total Time: 35 mins

Ingredients
- 2 pounds red potatoes
- 8 bacon slices
- 2 teaspoons of garlic salt (Note: I use Trader Joe’s garlic salt which has a nice mild flavor)
- 1/4teaspoon pepper
- 1/2 cup sour cream
- 2 heaping tablespoons of mayonnaise
- 1 teaspoon of Trader Joe’s Jalapeno Pepper Hot Sauce
- 2/3 cup of shredded cheddar cheese
- 1 tablespoon of chopped parsley (special note: can substitute for green onion)
Instructions
- Cut potatoes into small bite size pieces leaving the skins but cutting out any bad parts
- Place in large stock pot and cover with cold water and salt
- Bring potatoes to boil and cook just until fork tender about 5-7 min
- Drain and allow to cool
- Cut bacon into small bite size pieces and cook in medium sized skillet until crispy
- Place on paper towel and allow to cool
- Once bacon and potatoes are cooled mix sour cream, mayonnaise and hot sauce in small bowl
- Toss together the potatoes, garlic salt, pepper, bacon, sour cream mixture, cheddar cheese and parsley
- Refrigerate until serving
- (Special Note: you can add extra cheddar cheese, bacon and parsley/green onion to garnish with before serving)
