Loaded Potato Salad

Loaded Potato SaladSummer picnics are special to those who spend three quarters of the year cuddling under blankets to keep warm. By the time it gets warm half those days we are still unable to enjoy the weather because its raining. We don’t make certain foods as often as those who live in warmer climates, like this potato salad which is the perfect side for a barbeque on beautiful summer days. When the weather finally breaks, out comes our barbeques and bags. This is an exciting time that we all appreciate more than you could imagine, especially after the weather we had this past year.

Any dish that calls for bacon and cheese is perfect in my opinion. This loaded potato salad has all the flavors of a loaded baked potato in a cold salad. The perfect summer side for any meal or as your new side to bring to parties. The secret ingredient that adds an extra pop of flavor is the hot sauce I get, Jalapeno Pepper Hot Sauce from Trader Joe’s. I recommend this specific hot sauce because it adds more flavor than heat, allowing this to be a kid friendly dish.
