It’s become somewhat of a tradition in America to make Mom breakfast on Mother’s Day. If your looking for a cute simple breakfast that is sure to make her feel loved then here you go. They look so simple, but when mom bites into these she is going to get a mouthful of heavenly light and flavorful tasting eggs. The perfect side could be a simple bowl of strawberries drizzled with honey and some buttery croissants (just don’t forget moms coffee!)

A perfect breakfast to start Mom’s day or start to any morning. They remove very easily from the pan if you make sure to heavily brush with melted butter. The cottage cheese really helps keep these light and fluffy, while the green chilies add that nice flavor you were not expecting. Like I always say “Everything is better with cheddar!” These mini eggs are little, but never underestimate the power of little things.

Mini Eggs with Cheddar and Green Chilies


  • 4 tablespoons of butter
  • 5 large eggs
  • 1 cup of cottage cheese
  • 1/2 cup of cheddar cheese plus more for topping
  • 3 ounces of a 4ounce can of diced green chilies
  • 1/4 cup of flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • pinch of pepper
  • 2 mini muffin pans


  1. Preheat oven to 350F
  2. Melt butter and grease 2 mini muffin pans brushing with butter generously (about 2 tablespoons) and set aside
  3. In a medium bowl whisk together eggs, cottage cheese, cheddar cheese, chiles, flour, baking powder, salt, pepper and remaining 2 tablespoons of butter
  4. Spoon in egg mixture just over half way into greased mini pan
  5. bake for about 12 minutes
  6. Makes About 48 mini eggs
